Meal Plan Monday - July 1

We discovered by accident that our younger son likes salad.  We have been eating a lot of salad and he now even asks for lettuce in his sandwiches!  It's a miracle.  We have been amazed at the complete change we have seen in our former picky eater's eating habits.  If you have a picky eater, you may find some of the tips I share on Hope For Parents of Picky Eaters helpful.

Here's our menu for this week:

Cereal, Bananas
Homemade Instant Oatmeal Packets
Scrambled Eggs, Toast

Tossed Salad
Baked Bean Burritos (using leftover baked beans from last week), Carrot Sticks
Grilled Cheese, Carrot Sticks, Applesauce
English Muffin Pizzas, Apple Slices
Dinner Leftovers

     Mini Corn Dog Muffins (using leftover hot dogs from last week), Vegetables

     Spaghetti Pie, Tossed Salad

    Slow Cooker Lemon & Garlic Chicken, Vegetables

    Whole Wheat Calzones, Tossed Salad

   Leftover Night

   Breakfast for dinner: Breakfast Burrito (meatless), Fruit

    Slow Cooker BBQ Chicken, Vegetables

It is too funny how you can lead a kid to salad...but he won't eat it til he's good and ready! One of my kids would finish our salads each night when he was a toddler, and even drink the dregs of the dry blue cheese and balsamic vinaigrette at the bottom of the bowl. Now at 9 he hates lettuce. My second kiddo wouldn't touch lettuce til she turned 5; now it's her favorite veggie.

Thank you for the reminder that children's likes and dislikes do change. Hopefully he'll be eating salad for a many years to come; just yesterday he asked to have salad for lunch. :)

Like the menu...I never thought of using leftover hotdogs like that. I will have to try that!
