Meal Plan Monday 5/6



Last week I completely underestimated the time it would take to thaw a whole chicken.  By Saturday it still wasn't completely thawed, so I added the recipe to this week's menu.  


I've been looking for some new lunch ideas and I can't wait to try the veggie bites and strawberry walnut muffins!  Here's our menu for this week:

Breakfast
Cereal, Bananas
Homemade Instant Oatmeal Packets
French Toast Casserole
Scrambled Eggs, Toast

Lunch
Veggie Bites, Applesauce
Turkey & Cheese Sandwiches, Carrot Sticks w/Roasted Red Pepper Hummus
Strawberry Walnut Muffins (add 1 cup strawberries and shredded carrots to recipe), Yogurt
SunButter & Jelly Sandwiches, Applesauce, Carrot Sticks
English Muffin Pizzas
Dinner Leftovers

Dinner
Monday:
    Roast Sticky Chicken--Rotisserie Style, Rice, Green Beans, Biscuits

Tuesday:
    Chicken Broccoli Rice Casserole (with leftover roast chicken), Leftover Biscuits

Wednesday:
     Slow Cooker Lemon Pepper Chicken, Mashed Potatoes, Veggies

Thursday:
    Eating out with hubby to celebrate his birthday.
    Mac & Cheese, Peas for the boys.

Friday:
    Leftover Night

Saturday:
    Creamy Rigatoni with Sausage & Red Peppers, Salad, Garlic Bread
    Chocolate Cake with chocolate cream cheese frosting and chocolate-lovers ice cream (birthday cake & ice cream for chocoholic husband).

Sunday: 
    Ranch Chicken Salad BLT
