Meal Plan Monday & Grocery Challenge Week #2 - June 27

Part of the reason that I plan our meals each week is to help us save money by shopping once per week for groceries.  Last week I went to the grocery store not once, not twice, but three times!!  Definitely not good planning on my part. :)  I still managed to stay under the $100 Grocery Challenge limit and ended up spending $57.05 for the week.

We really enjoyed the Simmered Chinese Chicken last week.  This was a new recipe for us and it turned out really well.  I made Chinese Chicken wraps with the leftovers that were very tasty {and healthy!}.  I wasn't able to make the Amish Baked Oatmeal last week, so I've added it to the menu for this week.

My husband is on vacation this week, so I am going to keep most meals simple, using many things that I already have on hand.  Here's what's cooking in my kitchen this week:

Meal Plan Monday & Grocery Challenge Week #1 - June 20



I am very excited to participate in the All You Grocery Challenge during the next four weeks.  What I like about this challenge is that contestants won't be judged only on how much they spend, but also on creativity and healthy choices.  It is definitely going to take some creativity to stay on budget during our vacation next week!  Each family can spend $25 per person per week.  I am allowed $100 a week for my family of 4 {includes eating out}. 


I plan the meals for the week based on what I have on hand and the sales at the grocery stores.  Stockpiling is another way that I have been able to save on my grocery bill--I watch for sales on items that we use a lot and match the sale with a coupon and buy extra to keep in the cupboards.  This week I've included a list of my grocery purchases.  There are many ingredients that you won't see on the list because I already had them on hand in my stockpile!

As I was surfing around the internet {is it still called "surfing?"}, I discovered Our Best Bites.  It's a fun blog with lots of creative recipes and crafts.  I loved this Tin Can Treats gift idea for Father's Day.  This week I am going to try the Chicken Bacon Stuffed Pizza Rolls recipe. 

Money Saving Mom blogged about making Amish Baked Oatmeal for the freezer last week, and I saw so many rave reviews that I had to put it on the menu this week.

Meal Plan Monday - June 6


My husband was on vacation last week and we decided to order dinner out one night.  I didn't make the slow cooker barbecue chicken and added it to this week's menu.

I got an a-mazing deal on turkey bacon last week and decided to make Bacon Cheeseburger Pasta this week.  This is another one-skillet meal that is so easy to make and the kids love it.  I'm also excited to try Strawberry Peach Shortcake this week!
