I was able to look through my old Taste of Home magazines last week for some inspiration for this week's menu.  I'm excited to be making my family some old favorites as well as some new recipes to try!  Here's what's cooking in my kitchen this week:

    Turkey Tetrazzini--This recipe makes 12 servings.  I usually make this with chicken and only make 1/2 the recipe for my family.

    BBQ Chicken Quesadillas--Using chicken from Slow Cooker Barbecue Chicken recipe.

Thursday:
    Chicken Fried Rice

Friday:
  Going Out Of Town

Saturday:
     Baked Marinated Chicken, Slow Cooked Bean Medley, Parmesan Knots

Saving In The Kitchen: Fill Your Freezer!


For many years, I was a "weekly grocery shopper".  That's all that went into my cart--just enough for the week.  If I came across a great deal on produce, just enough for one week went into my cart.  That rock bottom price on chicken?  I put one package in my cart and hoped for another sale the next week. 

After getting serious about finding ways to save money, I quickly learned that I was missing out on one of the easiest and most practical ways to save money...using my freezer!



What's in my freezer.....
  • Chopped and sliced green peppers.  They were on sale for $.69/lb.  Since they are usually over $2 a pound in my area and I cook with these pretty often, I couldn't resist buying quite a few of these and freezing them.
  • Chicken.  Lately I have been able to find chicken on sale for $.99 almost every week.  I usually buy an extra package or two and put it in the freezer.  It will be nice to have when there is a week with no meat sales.
  • Bread.  We just went to the local Country Kitchen bread store during their 5 for $5 sale.  They are able to sell bread so low because it is about to expire, so I always put it right into the freezer.  And of course, I also have bread end-slices.
  • Fruit.  I recently had grapes, strawberries and bananas that were getting a bit too ripe so I put them in the freezer.  The grapes and strawberries will make good smoothies and I will make banana bread or muffins with the bananas.
  • Popsicles from last summer.  Yes, I have a few popsicles with freezer burn in my freezer.  It's good to remember that food doesn't last forever in the freezer! :)

Meal Plan Monday - May 16


For the last couple of weeks, I have been able to find split chicken breast on sale for $.99/lb.  I have been  making my own boneless, skinless chicken breasts by cutting the chicken away from the bone {you can see how to do this here}.  After I get as much of the meat off as possible, I take the bones and boil them to get all the little peices of meat off and I usually have more than enough for another meal {this week I'm making chicken pot pie}.  Considering the price of boneless, skinless chicken breasts I have been saving a lot of money AND have been able to offer my family a good variety of meals.



There have been some great deals on chicken, but I did splurge this week and buy a small package of hamburger since we are feeling a craving for something different.  Here's what's cooking in my kitchen this week:

Pancakes
English Muffins & Bananas
Cinnamon & Spice Oatmeal Muffins - These are so good with grated apple mixed into the batter!
 
Lunch
Chicken Salad Sandwiches, Carrots
Ham Sandwiches, Grapes
Taco Macaroni & Cheese - Just add 1 to 2 tbs. of taco seasoning and corn!
Burritos made with leftover Ranch Style Baked Beans and toppings--This probably sounds a little strange, but whenever I make Ranch Style Baked Beans for dinner, we always have a lot left over.  I've been trying to find ways to use up leftovers, and this is my way of using up this recipe so that we don't waste it by throwing it away.

  Ranch Style Baked Beans, Hot Dogs, Corn - The recipe that I linked to is similar to the recipe that I use.  I don't use the soup mix or the water in my recipe and I only use 2 tsp. of vinegar and 1/2 c. brown sugar.  I love this recipe--so easy and no one will know that this dish is not "real" baked beans


Tuesday:
    Chicken Pot Pie

Wednesday:
   Spaghetti


Thursday:
   Teriyaki Chicken in Crockpot, Rice, Corn

Friday:
  Tuna Casserole

Saturday:
    Oven Fried Chicken Tenders, veggies

Sunday:
   Leftover Night


Other: I have a bag full of bread end slices in the freezer, so I'm going to make bread pudding this week!

Tuesday:
   Baked Chicken, Salad - This is one of my favorite chicken recipes.  The tangy sauce is so easy to
   make and is made with ingredients I always have on hand!

Wednesday:
   Hamburgers, Salad

Thursday:
    Pasta Pizza Pie, Green Beans

Friday:
   Meatloaf Patties - Instead of cooking the meatloaf patties in a skillet {they are a little bit too greasy
   for us}, I put them on a broiler pan and cook them under the broiler for about 5-7 minutes on
  each side. 

Saturday:
    Awefully Easy Chicken {crockpot recipe} w/mashed potatoes -  Recipe from Fix-It and Forget-It
   Cookbook

4-lb. chicken legs & thighs
3 large onions quartered or sliced {optional}
1/2 cup water
14-oz. bottle barbecue sauce

1.  Quarter or slice onions and place in bottom of slow cooker.  2.  Add water in bottom of slow cooker.  Add chicken and pour barbecue sauce over top.  3.  Cover; cook on low 8 hours.  I usually half this recipe.  The sauce is delicious served over mashed potato.
