Meal Plan Monday

Here's what's cooking in my kitchen:

Cold Cereal w/Milk & Raisins
Blueberry Cream Muffins {I thought I would try this recipe as I have some sour cream that I need to use up!}

Fri:        Chunky Potato Soup {see recipe below}
Sat:       Bacon Cheeseburger Pasta
Sun:      Leftovers

Chunky Potato Soup
This creamy soup is perfect for cold, winter nights.  I usually double this recipe as the leftovers taste even better!  This soup is wonderful with homemade biscuits.

What you need:
3 med. red potatoes
2 cups water
1 small onion
3 tbs. butter
3 tbs. flour
crushed red pepper flakes {optional}
ground black pepper
dash of garlic powder
1 chicken bouillon cube
3 cups milk
1/2 tsp. sugar
1 cup shredded Cheddar cheese
1 cup cubed cooked ham  {I sometimes use cooked, chopped bacon}

  1. Peel potatoes and cut into 1-inch cubes.
  2. Bring water to a boil in a large saucepan.  Add potatoes and cook until tender.  Drain, reserving liquid.  Set aside potatoes.  Measure 1 cup of cooking liquid, adding water if necessary; set aside.
  3. Peel and finely chop onion.  Melt butter in saucepan over medium heat.  Add onion to saucepan; cook, stirring frequently until onion is translucent and tender, but not brown.
  4. Add flour to saucepan; season with pepper flakes, black pepper and garlic powder to taste.  Stir until well combined.
  5. Gradually add reserved cooking liquid, milk, sugar and bouillon cube to onion mixture and stir well.  Add cheese and ham or bacon.  Simmer over low heat for 20 minutes stirring frequently.  Add potatoes and simmer for 10 - 15 minutes longer or until heated through.
