Part of the reason that I plan our meals each week is to help us save money by shopping once per week for groceries. Last week I went to the grocery store not once, not twice, but three times!! Definitely not good planning on my part. :) I still managed to stay under the $100 Grocery Challenge limit and ended up spending $57.05 for the week.
We really enjoyed the Simmered Chinese Chicken last week. This was a new recipe for us and it turned out really well. I made Chinese Chicken wraps with the leftovers that were very tasty {and healthy!}. I wasn't able to make the Amish Baked Oatmeal last week, so I've added it to the menu for this week.
My husband is on vacation this week, so I am going to keep most meals simple, using many things that I already have on hand. Here's what's cooking in my kitchen this week:
